built a bistro

Matt Drummond grew up in a house where the kitchen was the centre of everything. His mom hosted neighbours on weeknights like it was a holiday — mismatched chairs, big pots, good wine, everyone welcome. By the time he was twelve, Matt was the one doing the cooking. Not because anyone asked him to. He just liked the way people looked when the food was good.

In his twenties, what started as cooking for friends turned into something more serious. Private dinners, small catering gigs, the occasional pop-up in borrowed kitchens. Matt never trained formally — he learned by doing, by reading obsessively, and by eating at every bistro and brasserie he could find in Montréal, Lyon, and Paris. He came back to Calgary with a notebook full of recipes and a conviction: the city needed a French bistro that didn't take itself too seriously.

“I wanted a place where you could order a $40 steak and still feel like you're eating at a friend's house.”

He found the space on Edmonton Trail in 2023 — a tired old building with good bones and a neighbourhood that reminded him of home. Over six months, Matt rebuilt it by hand. The exposed brick, the warm wood, the long red bar that looks like it's been there for decades — that was all him, with help from friends who believed in the idea.

Le Charme opened quietly. No PR campaign, no influencer launch. Just good food, an honest wine list, and a firepit on the patio that stays lit even in January. Word spread the old-fashioned way — one great meal at a time. Today it's one of Calgary's most beloved neighbourhood spots, and Matt is still in the dining room most nights, pouring wine and making sure every table feels like his kitchen table growing up.
